INGREDIENTS
2oz/50g each chopped walnuts and halved dried cranberries 6oz/175g medium oatmeal 1tbs coconut oil 3tbs boiling water 1egg, beaten
METHOD
Mix dry ingredients; put oil in well in middle of dry ingredients, pour water onto it and stir to melt. Stir in rest of dry ingredients. Stir in beaten egg.
Lightly press down mixture onto board sprinkled with oat bran (meal, flour or etc.), turn over and sprinkle more on top, and roll out to at least 1/4", or nearly 1cm. Use large pastry cutter to cut circular biscuits. Bake on baking sheet at Gas Mk5/190C for 20 mins.
Martyns in Muswell Hill have medium oatmeal (if you don't get it from the Food Co-op!). The cranberries we get from the Food Co-op have been soaked in applejuice - I use kitchen scissors to cut them in half because they are impossibly sticky to chop with a knife.
